Swedish Cinnamon Buns

On the 4th of October every year in Sweden, it is ‘kanelbullar dag’ – ‘cinnamon bun day’. Cinnamon buns are very popular in Sweden – so we decided to make some…

Ingredients :
25g yeast
75g butter
2 1/2 dl milk
1/2 dl sugar
1 pinch salt
7 dl flour

Filling ; 50g butter
1/2 dl sugar
1 teaspoon cinnamon

To ‘paint’ buns ;
1 egg

Decoration ;
‘Pearl’ sugar

1) Crumble yeast into a bowl.
2) Melt the butter, and add the milk. Leave it to become finger warm, around 37 degrees C.
3) Stir the yeast in to a little of the milk mixture. Then add the rest.
4) Add salt and sugar and stir.
5) Stir in flour, a little at a time. Knead the dough until it’s soft.
6) Leave dough to rise until a tea towel for 30 minutes.
7) When dough ready, put it on a floured board…


8) Knead it a little, then roll it out in to a rectangle shape, around 20 x 30 cm..

9) Mix the filling – butter, sugar and cinnamon – in a bowl…

10) Spread it across the rolled out dough…

….and eat the rest…

11) Roll up the dough in to a ‘sausage’ shape….

12) Slice it, and set slices on papered baking tray…

13) ‘Paint’ with egg, and sprinkle on ‘pearl sugar’…

14) Put in to the oven for 8 – 10 minutes, on 250 C….
